Your List of Ingredients

  • 1 bag dried lima beans

  • 3-4 tablespoon Herbs de Provence Olive Oil

  • 2 celery stalks, sliced

  • 2 carrots, chopped

  • 1 onion, chopped

  • 1 clove garlic, minced

  • 4 cups vegetable or chicken broth

  • 1 tablespoon Italian seasoning

  • 1 tablespoon garlic powder

  • 1 tablespoon sea salt

  • 1 teaspoon fresh thyme, leaves removed from stems

Step 1: Getting Started

  • In a large soup pot, heat the olive oil over medium heat.

Step 2:

  • Sauté the celery, carrots, and onion for 5 minutes, until softened.

  • Add the garlic and sauté for 30 seconds.

Step 3:

  • Add in the broth, Italian seasoning, garlic powder, and thyme leaves and stir to combine.

  • Stir the lima beans in. Bring to a boil, then reduce heat to a simmer and cook until the lima beans are softened about 25-40 minutes.

  • Add salt and pepper to taste. Serve with bread for dipping if desired.
